Recipes I Can't Wait to Try #26

Yay for new recipe day!  I need to apologize to you all for not commenting on your recipes you linked up last week.  We are already crazy enough during the Easter holiday, which brings my internet time to practically non-existent.  But this year was especially difficult.  This year I decided to make Hannah and Ava's (my niece) Easter dresses.  That is all I was able to work on all week.  As a matter of fact, I didn't go to sleep Friday night. I finally went to bed Saturday morning at 8am.  I woke up at 9am to start getting ready to celebrate Easter at my parent's house.  At 9:20 I received a phone call from a special family to us.  Their almost 7 week old baby passed away from SIDS sometime Friday night.  Some of you already know that James and I have a daughter, Faith Lynn, in heaven.  If you want to read our story, feel free to click on the link.  The loss of a child is absolutely devastating.  James and I were deeply saddened to learn that some friends were going to have to experience that loss.  We went to their home to be with them that morning and early afternoon.  Anyway, if any of you are the praying type, please keep J & E in your prayers.  They will most certainly need them.   I'm sorry to be such a downer today, this is all weighing heavily on my mind.  *Wiping away tears and putting a smile on my face*

On to this week's recipe!  This time of the year, I go crazy for all of the fresh fruits that are in season.  So this weeks Recipe I Can't Wait to Try is Fruit Pizza at Cupcake Apothecary!  This is not a new recipe to most of us, but it's soooooo good!  Plus, we can't deny how pretty it is!

It's Wednesday...it's before 10am...did you click on the right blog?!  Everybody who's anybody knows that lately, I haven't gotten this done before about 4pm!!!  All joking aside, I'm glad you're here!  This week I couldn't ignore the fact 3 different recipes that were linked up used egg roll pastries.  I just purchased some the other day and have been looking for some new recipes to use with them.  Yay me!!!  So this week I'm doing things a little different and featuring 3 different recipes that I can't wait to try!

Recipes I Can't Wait to Try #24

Maybe I should rename this blog to "At Home With Late Haley".  :-/  So sorry!  I've just been swamped lately!  The past two weeks I have featured savory items.  As a matter of fact, they were both pizza dishes.  Weird.  Anyway, this week I'm kind of thirsty!  The Lemon & Strawberry Teas from My Hobbie Lobbie is this week's recipes I can't wait to try!  They sound like the perfect compliment to the weather right now!  I love specialty teas like these because they feel 'gourmet'.  Like I should be sitting in an over priced tea room enjoying a fancy sandwich.  Not to mention they make great additions to a brunch.  Trisha, I hope you have lots of tea leaves, lemons, and strawberries, because you're about to get very popular!  ;-)

Friday's Random Thoughts & Confessions

It's Friday!  Do the happy dance!!!!  Here's my random thoughts and confessions for the day that have nothing to do with the purpose of my blog.


  1. Apparently I didn't get Hannah's breakfast fast enough this morning.  She was on a scavenger hunt under the kitchen table.  Ew.  *Note to self* Start sweeping at night instead of first thing in the morning.  
  2. We are so crazy busy this weekend!  It's going to be great...but BUSY!
  3. Friday is my favorite day!  I get to spend two whole days with my amazing husband after Friday.  Soooo grateful for him!
  4. Have I mentioned that my husband is AMAZING lately?  ;-)  The other night I crashed hard on the couch.  Instead of waking me up, he got the kids in bed and then cleaned the kitchen.  Only woke me up to go to bed.  I <3 that man!
  5. I need to go to Whole Foods today.  Nathan is not happy about it though.  He wants to go to a grocery store with the little carts that he can push.  Hey Whole Foods...do you think you can deliver that?  For my own sanity, I would really appreciate it.
  6. "They" say babies typically come in 3's. (Who is "they"?)  I learned of 2 new expectant mom's this week.  Who's next?  (Won't be me!) ;-)   
  7. The weather's warming up and I'm getting ready to dust off my scuba gear!!!
  8. I still haven't posted a new recipe!  I'm so sorry.  It will happen...I promise!

Recipes I Can't Wait to Try #23

I'm late AGAIN!  Y'all should fire me!  ;-)  I just don't have it together today.  James so very graciously took Joseph to school for me this morning.  I had a dentist appointment at 9:15.    At 8:50 I was sitting on my couch, in my p.j.'s, happily reading a book.  :-/  I looked up at the clock and it triggered my memory...although I couldn't remember what it was that I needed to do this morning.  Out of nowhere it hit me!  DENTIST!  I ran to my room and threw on some clothes.  Then I ran to get Nathan and Hannah up and dressed.  I shoved a bottle in Hannah's mouth in her car seat and we were off to my friend's house that was supposed to watch them for me.   Somehow, I magically made it to the dentist office at 9:20.  I'm pretty sure it was a miracle.  So please forgive me that this is so late... apparently I'm just not with it.

I'm in a savory mood again today.  I know...weird.  So this weeks recipe I can't wait to try is Pizza Margherita from College Baker Girl!!  I have to confess though...I already tried it. =)  It was delicious.  It wasn't my first time to make it, but when I saw her pictures I knew that I was going to make it ASAP.  Mmmmm....basil....cheese....  She recommends making it on a pita.  I made with whole wheat thin crust and my own tomato sauce.  I guess I was feeling a little domestic that day.  I had 4 tomatoes that I received from the produce co-op that I belong to that were becoming very ripe.  They were begging to become my sauce.  I guess I'm feeling a little chatty today.  Sorry!  Here you go, here's the recipe I 'already tried'...

Friday's Random Thoughts & Confessions

Wow!  It's 4:30 and I'm just now posting my random thoughts & confessions that have nothing to do with the purpose of my blog!  ;-)


  1. Joseph pulled his first tooth last night.  He went to bed and 45 minutes later came out of his room with a tooth almost completely pulled.  His motivation?  Picture day was today.  =)
  2. The weather is GORGEOUS today!!!!  If it is as nice where you are as it is here...go outside!
  3. I made a cheesecake last night that is delicious!  I'll post the recipe next week. ;-)
  4. I still haven't posted the recipe I was typing up last week.  
  5. I still have a crazy amount of laundry to do.  It's almost embarrassing that we have as many clothes as we do.  I think it's time to purge!
