Recipes I Can't Wait to Try #18

I'm so sorry y'all.  Please accept my apologies for being so late.  I have been really sick this week and it just hit me about an hour ago that I hadn't done today's party.  I'm afraid to say it out loud...but I'm scared that I may have the F_ _.  =(  Because I've been sick, I've also failed to visit everyone that linked up last week.  I will be sure to do that as soon as I'm feeling better.  Please don't be offended if you didn't receive a personal comment.  I really appreciate you taking the time to link up on Recipes I Can't Wait to Try.

On to the recipe that caught my eye this week....

Doesn't that look delicious?!  It appears to be a "granola styled" cereal.  Yummy!  This is definitely something I could see my family enjoying.  Thanks to Lori at Laurel of Leaves for sharing this recipe.  It's definitely a recipe I can't wait to try!

Now let's see some Recipes I Can't Wait to Try!  Link up your yummy recipes & fun crafts!  My request is that you please link back to me in some way and say, "Hi!" to another party goer!  Everyone loves getting a new comment, so show some love!  =)  Also, this week I've made it a blog hop, so feel free to add it to your own blog.  Enjoy!

Recipes I Can't Wait to Try #17

I'm LATE....AGAIN!!!!  For the past couple of weeks I have done really good getting this done ahead of time so that it would publish automatically.  I failed this week.  My apologies!  My week has been INSANE!  But some exciting news is that my husband and I picked up our first shipment yesterday from an organic produce co-op!  We got a ton of produce all for the prices of conventional!  Yay us!

OK, on to Recipes I Can't Wait to Try!  I have so much fun looking through all of the recipes each week.  But this week, I couldn't help but notice that there were two VERY similar looking yet unique recipes.  So here are this week's recipes I can't wait to try!

Friday's Random Thoughts / Confessions

That's right.  It's time for my random thought and confessions that have nothing to do with the purpose of my blog.

  1. I got next to no sleep last night because Hannah decided it wasn't in her plans.  So not cool.
  2. I actually forgot to prepare Joseph's lunch for him yesterday before he went to school.  Thankfully there was a little money in his lunch account.  duh!  So embarrassing.
  3. Can't it be just a little warmer?  This Texas girl is missing some warm wind and sun!  I know those of you that live in the North don't feel sorry for me, but that's OK.  I never claimed to not be a warm weather wuss.
  4. Yesterday I had to call our internet tech support.  The kind gentlemen had a very strong Indian accent.  I couldn't help but giggle and think of the TV show "Outsourced".  Such a funny show.  I could only picture Gupta and Manmeet the entire conversation.  By the way, I don't think his name was really James.  I guess it's better that way so that I don't offend the nice guy by butchering his name.
  5. If you haven't watched Food, Inc. on Netflix...you should!  Your whole outlook on food will change.  I challenge you to watch it ASAP!  If you're like me, you will become a documentary junkie and watch them 24/7.
  6. I joined an organic produce co-op last week and pick up our first shipment on Tuesday.  I'm so excited about it!
  7. Nathan hasn't stopped speaking since he woke up this morning.  3 hours and counting...

OK, so that was so much fun surprising Mo' Betta last week, I decided to do it again with another unsuspecting blogger.  =)  This week's blog I read is Apples and Twinkies!  The writer is Ann.  She has 2 grown children and 1 teenager.  She is also fighting the battle of her life, stage 4 cancer.  What a strong and courageous woman!  Ann, we all stand behind you as you fight!  I hope that all of my readers will join with me and pray that Ann will overcome her sickness.  Ann has some UBER yummy looking recipes on Apples & Twinkies.  Here are some of the recipes I can't wait to try!

French Bread & Tomato Basil Soup

There is something about a good loaf of French bread and tomato basil soup.  The other night, I made a copycat recipe of La Madeleine's Tomato Basil Soup.  It is so good.  I typically don't really care for tomato soups.  But I can drink La Madeleine's tomato basil with a straw!  One of the best things about eating soup at La Madeleine is that there is all you can eat slices of bread, butter, and jams.  *Thump-thump...thump-thump...thump-thump*  (That was my heart)  But since I wasn't eating at La Madeleine, I had to make my own bread.  I chose Kara's French Bread from Creations by Kara.  It is one of my favorite blogs and her recipes never disappoint me.  So thanks to Kara for posting this super yummy recipe!  This is a perfect meal to make on these cold days that we've been having!

French Bread - From Creations by Kara
2 1/2 cups warm water
2 Tbsp SAF instant yeast
2 Tbsp sugar
1 Tbsp salt
2 Tbsp oil
6 cups flour (approximately)

In a large bowl, let water, yeast, and sugar set till bubbly. Add salt, oil and 3 cups of flour. Beat till smooth. Add remaining flour. Let dough rest for 10 minutes, then punch down or knead a couple of times. Divide dough in half. To form loaves, roll the dough into a rectangle. Then roll it up tightly lengthwise (like you would with cinnamon rolls, just without the cinnamon). Seal the edges by pinching together. Grease a cookie sheet and sprinkle it with cornmeal. Place the loaves on the cookie sheet and let raise for about 30 minutes. Brush the tops with water and make diagonal slashes on top using a serrated knife. Bake at 375 for about 25 minutes or till lightly browned. Brush tops with butter.

Tomato Basil Soup - A La Madeleine copycat recipe
4 cups tomatoes (8 to 10), peeled, cored and chopped, or 4 cups canned whole tomatoes, crushed
4 cups unsalted tomato juice

12 - 14 fresh basil leaves, plus additional for garnish, chopped
1 cup heavy whipping cream
1/2 cup sweet, unsalted butter, softened
1/4 teaspoon cracked black pepper
salt to taste

Combine tomatoes and juice in saucepan.  Simmer for 30 minutes over medium-low heat.  Cool slightly, then place in a blender or food processor.  Add basil and process to puree; this will have to be done in batches.  Return mixture to saucepan.  Add cream & butter.  Stir over low heat until butter and cream are incorporated.  Stir in salt and pepper before serving.  Garnish with more fresh basil and serve.  Makes 8 servings.

Friday's Random Thoughts / Confessions

Here you go.  Here are today's random thoughts and confessions that don't really have anything to do with the purpose of my blog. ;-)

  1. James had to ask me to do laundry yesterday.  *shame*
  2. I drove my car for 3 months with an expired registration sticker without getting a second glance from a police officer.  A couple of weeks ago, I got pulled over.  The very next day, I got pulled over again. (BTW, I'm legal now.)
  3. Because we haven't left the house since Sunday due to Joseph being sick and the ice, I haven't put on makeup even once.
  4. I'm annoyed that I can't find my 8 gig SD card with lots of pictures on it.
  5. I spent way to much time trying to design a new header for my blog.  I couldn't get it right.  The one that I finally used took 5 minutes.  (Isn't it cute though?)
  6. I go back and forth as to whether or not I want to have another baby.  I have plenty of excuses to not have another.  I feel guilty for not at least trying to give Hannah a sister.  I look at how much fun my boys have together and I want that for her.  Not to mention the fact that I get kind of sad thinking that Hannah may be my last baby.  I have kind of difficult pregnancies, but I love being pregnant.
  7. I love that my family sits down at the table every night for dinner.  Food is not allowed in our living room.

Cooking blogs I read Thursday

There are so many blogs out there.  Sometimes you come across one that just makes you smile.  I would like to start featuring some of those blogs every now and then here.  You know...to show some love.

Mo' Betta is one of those blogs for me.  Kim at Mo' Betta is witty and real.  I think I have a blog crush on her.  She is a mommy blogger of 3 and does a great job at incorporating her entire family into her blog while still staying relevant. She has some great recipes too.  Even though I confess that I haven't tried them (but I want to), some of my favorites are:

It's a baking sort of day...

Yes, I said "It's a baking sort of day.", in my best Pooh Bear voice. =)  All week I have been hearing that we were supposed to get sleet on Tuesday.  I believed that it was coming, but I had no idea that we were going to get sleet.

This is a picture of my driveway...it is straight ice.  It was so strange waking up in the middle of the night, hearing thunder, seeing lightening, and hearing sleet hit my window.  James stayed home from work and Joseph's school was cancelled, we are all iced in.  So what's a girl to do on a day like this?  Bake, of course!  ;-)  I have a whole list of things I am working on today:

Also for dinner tonight we are going to have a La Madeleine tomato basil soup copycat.  Are you snow/iced in?  What are you making?

By the way, don't forget to take advantage of your 10% discount at Home A La Mode on this cutsie Valentines day tablecloth!  At checkout, just enter in the coupon code HALEY10 and click "apply".  You have until Sunday, February 6.
