Recipes I Can't Wait to Try #39

I'm on the ball this morning!  
My husband's grandmother is coming to spend a few days with us and I'm up and at 'em!  I have been making attempting to make my place look presentable, I have bread rising, and here I am trying to get this done before she arrives.  Am I the only one that waits till the last minute to do ANYTHING? Sigh.

Thank you to those of you that have been lifting Baby B up in prayer.  He starts his chemo tomorrow, so please keep them coming!  He and his family can use all the prayers they can get.

Lemon Basil Mahi Mahi



We are fishy kind of people at our house.  =)  All 5 of us (even my 1 year old) enjoy a good fish meal.  Yay for me!  I didn't follow a recipe on this.  So I guess you could say this is an original recipe...although I'm sure that if you were to search for some online, you would find several very similar to this one.  It a was very easy & fast meal that will have your family thinking you spent hours on it.  *Think those old Rice Krispy Treat commercials where the mom throws flour all over her to make it appear to her family that the treats were really difficult.*  Woohoo!  I served it with zucchini and corn on the cob.  It's full of flavor and is oh so good for you too!  Can I get another, "Woohoo!", please?

Lemon Basil Mahi Mahi
Prep: 5 mins  Cook: 10-15 mins

Ingredients:

  • 4 Mahi Mahi fillets
  • 1/4 cup butter (1/2 stick) 
  • Juice from 1/2 lemon
  • 4-5 large basil leaves
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • Olive Oil


Directions:

  • Melt butter in a sauce pan over medium-low heat.  
  • While butter is melting, dice the basil leaves and add to the butter and stir. 
  • Add lemon juice, pepper, and sea salt to the butter mixture and stir.
  • Brush olive oil on the rack of a broiler pan
  • Place fish on the rack and brush generously both sides with the butter mixture.
  • Turn on broiler
  • Place in the oven for 10-15 minutes.  Times may vary from oven to oven.  Be sure to keep a close eye on it.  Over cooked fish is very sad.  

If you would like to add the zucchini as a side...
  • Cut the zucchini in half.
  • Take each half and slice it into 1/4s long ways.
  • Place on a pan and brush with remaining butter mixture.
  • I also quartered onions and brushed them with the butter mixture.  YUMMY!
  • Place in the oven with the fish.  It will take about the same amount of time to cook as the fish.

Heal Ear Infections...The Natural Way

Several weeks back, I mentioned that I have become VERY interested in natural living topics and expanding At Home With Haley to include some of them.  Don't worry, I'm not cutting out sugar in my recipes...yet. ;-)  I'm happy to say that this is my first post to introduce a natural remedy.  I'm so excited to share with you the natural way to heal ear infections.  I am a regular reader at Mommypotamus.  Heather has a wonderful blog and talks all about natural living.  Back in February, she hosted a guest post by Katja Swift, a clinical herbalist, called Spice Rack Remedies for Cold & Flu Season.  I can honestly say that this is when I became a believer in "Spice Rack Remedies".  The very next night after I read that blog post, my 4 year old, Nathan, woke up crying in his bed.  I went to check on him and brought him into my bedroom when he told me that his ear hurt.  Automatically, I got up in search for the pain killer meds.  Wouldn't you know we were out?!  That kind of stuff only happens when you really need it.  I then remembered seeing this in the article on Mommypotamus, written by Katja Swift:



"As a child, I was particularly prone to ear infections, but no one figured out that I have a dairy allergy until I was an adult. If your child has recurrent ear infections, make sure to consider eliminating dairy products, or gluten, or both – they are often the root of the problem.
But whatever the cause, my favorite remedy is something you probably already have in your kitchen: Onion! Slice an onion in rings about 3/4 of an inch thick. Sauté lightly in olive oil, until it’s hot all the way through and softening. Wrap the onion slice in a clean soft cloth and lay it on the ear like a heating pad – be sure to test the heat first so that little ears don’t burn.
Why does it work? The sulfur in the onion is carried into the ear via the steam, and kills the infection. Also, the heat is soothing, especially when the infection is painful. Always treat both ears, as ear infections can travel back and forth between ears via the interior canals. Repeat as often as necessary – I usually find that doing this every few hours for a day is enough to end the infection altogether."


How cool is that?!  So I marched myself into the kitchen and started slicing onions.  I then remembered reading once before that garlic is a natural antibiotic....so, I chopped a clove up and threw that in the pan as well.  Within minutes of placing the cloth with the onions and garlic inside on Nathan's ear, he stopped crying.  =)  First thing the next morning, I made him another batch of what my sister likes to call my "Earth Mother Medicine".  If he complained of his ear hurting at all between treatments, I went ahead and made more.  As a matter of fact, he started saying, "I need my onions."  By the following day, he had no more pain and the ear infection was gone!!!  
I have used the same treatment on my other 2 children and myself with success.  Even more fun, my sister who lovingly nicknamed this as my "Earth Mother Medicine" tried it on her 5 year old who has had major problems with ear infections.  Guess what?  It worked for her too!  This remedy definitely receives 2 thumbs up from the At Home With Haley household!

Recipes I Can't Wait to Try #38

Is it really Wednesday already?!  
I'm such a nerd, I totally forgot what day it was.  When school is out, I'm all out of sorts!  I hope you are all doing well.   To my regular visitors, "Thanks for coming back!"  To my new visitors, "Thanks for stopping in...and be like my regular visitors!"  ;-)  

For those of you that took the time out of your busy schedules last week to lift up Baby B in prayer, thank you so much!!!  I got to go see him on Sunday and he is doing so much better!  Last week, I reported that they were not going to be able to remove the tumor...well they were.  It was so large that it completely covered his kidney.  :-/  They diagnosed him with a Wilms Tumor.  It is cancer.  Baby B will have to do 6 weeks of radiation and 6-8 months of chemotherapy.  They are hoping that he will be able to come home sometime this week.  Please continue to pray for him as he recovers from his surgery and prepares for his treatments.  

Ok, on to this week's Recipes I Can't Wait to Try!!!  I know I say this all the time, but y'all are killing me!  Everything always looks so good.  Trying to pick which ones to feature is crazy difficult!

Recipes I Can't Wait to Try #37

Yay for Recipes I Can't Wait to Try!!!


Before I announce this week's Recipes I Can't Wait to Try, I want to make a quick request to my praying friends.  A little boy that I used to watch has just been diagnosed with kidney cancer. He is 2 years old and is about to start chemo and radiation.  The doctors can't remove the tumor because it is too large. As you can imagine, his parents, who are very good friends of ours, are devastated and covet any and all prayers for their sweet little boy.  So if you get a moment, will you please lift a prayer up for Baby B?  

My time didn't allow me to comment on all of your delicious recipes, but I did visit each one of you.  All I can say is OMGSH!!  Thank you so much for taking the time to come and link up.  =)  This weekly party is a lot of fun for me.  So....on to why you're here...

To my American friends, I hope you all had a wonderful July 4th!  To my Canadian friends, I hope you had a great Canada Day!  

Y'all have just been knocking my socks off lately!  I mean really...how do I choose?!  Everything looks like it would make my taste-buds dance!  Thanks to everyone that linked up last week.  I think I'm going to start featuring 2 recipes a week; 1 sweet & 1 savory.  =)  Truth be told, the sweets always have the upper hand with me.  :-/  What can I say?  I have a sweet tooth.  So this should even out the playing field a little.
