Snickerdoodle Cheesecake Cookies




Yet again, please excuse my absence.  I honestly meant to update this blog through the holidays...but wow-y were we busy!  My husband took off of work the last 2 weeks of December and I spent all of my free time with him.  It was so nice!  I miss him something terrible now that he is back at work.  Please don't forget to come back and link up tomorrow on Recipes I Can't Wait to Try!!!  Anyway, here's the newest recipe for you! =)


Snickerdoodle Cheesecake Cookies...what a mouth full!  But honestly, I didn't know what else to call them.  I went to a cookie exchange and wanted to find some kind of "Christmas-y" cookies.  I spent a while online and looking through my trusty Betty Crocker's New Cookbook trying to find what I wanted to make.  I found a snickerdoodle recipe.  Yummm. Then I got back online and found the Oatmeal Cookie Blog.  If you haven't ever checked it out, you should!  He has some super yummy looking recipes!  Anyway, while I was searching through his site, I found recipes for stuffed cookies.  That's right, they had me at, "Hello."  Anyway, I started thinking...what if I combined his technique for stuffing with a snickerdoodle?  So I went on a limb and tried it.  The result?  A soft, cinnamon, sugar, cream cheese, cookie, yummy goodness!  Just try it...I triple dog dare you! ;-)

Snickerdoodle Cheesecake Cookies

Snickerdoodles -
1 1/2 cups sugar
1 cup stick butter, softened
2 large eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar
2 teaspoons ground cinnamon

Cream cheese filling - (Taken from Oatmeal Cookie Blog - Golden Girls Cookies)
8 oz cream cheese, room temperature
4 Tablespoons sugar
2 teaspoons vanilla

Directions:

  • Watch this video:



  • Mix the cream cheese filling and set to the side.  
  • Prepare the Snickerdoodles -
  1. Heat oven to 400 degrees.
  2. Mix 1 1/2 cups sugar, the butter, and eggs in large bowl.  Stir in flour, cream of tartar, baking soda and                  salt.
  3. Mix the 1/4 cup sugar and 2 teaspoons of sugar in a small bowl and set to the side.
  4. Shape dough into two 2-inch balls.  Flatten each one like in the video.  Apply your filling to one flattened ball with your method of choice.  Greg @ The Oatmeal Cookie Blog spoons his filling into the cookie.  I took the advice from one of his readers and piped the filling in using a zip lock bag.  (If you would like a tip on putting the mixture in the bag...check this out.)
  5. Take the other flattened ball and "sandwich" the two with the filling in the middle.  Pinch the edges together (like a ravioli) then gently & slowly roll the ball between your palms until it is smooth and round.  The dough will be fragile and will probably crack open every now and then.  Just take a pinch a of dough and apply it over the crack like a band aid.  (you will need to wash off your hands between each cookie or the dough will start to stick to your hands.)
  6. Roll the ball into the cinnamon and sugar mixture then place on a freezer safe plate.
  7. Continue with #'s 4-6 until your plate is full.
  8. Place the plate in the freezer for about 5 minutes.  
  9. Remove from the freezer and place on a parchment lined cookie sheet about 2 inches apart.  
  10. Bake 8 to 10 minutes or until set.  Remove from cookie sheet.  cool on wire rack.

Mini Cinnamon Roll Cookies


It's no secret that I enjoy cinnamon rolls.  (a lot!) I consider them an ultimate comfort food.  Previously, I have posted recipes for 90 Minute Cinnamon Rolls & for Cinnamon Roll Pancakes.  In all honesty, I am in need of comfort.  My grandfather went to be with the Lord 1 week ago today in an accident.  My heart is broken for his life which was cut too short and for my grandmother who must learn to live life without her husband.  He was a good man, a man of honor.  He was there to help anyone in need.  He loved people.  He loved to tell jokes and to laugh.  And one of my favorite things, my grandfather loved to eat!  He had quite a sweet tooth and my grandmother made sure and helped him out with that. =)  So I feel that it is fitting that for my last week of the official Month of Cookies on At Home With Haley I had already planned to make Mini Cinnamon Roll Cookies.   So in honor of one of the greatest men to ever be a part of my life, I give you this yummy recipe.  I found it in Taste of Home Magazine Oct/Nov 2010.  They are a little time consuming, but they turned out wonderful!

Here is the word for word recipe.  I will post my tips at the end.

Mini Cinnamon Roll Cookies
Prep: 1 hour Bake: 10 min/batch + Cooling
Yield: About 2-2 1/2 dozen

1 cup butter, softened
1-3/4 cups sugar, divided
3 egg yolks
1 Tbsp. plus 1 tsp honey, divided
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp cream of tartar
1 Tbsp ground cinnamon
8 oz white baking chocolate

In a large bowl, cream butter and 1-1/4 cups sugar until light and fluffy.  Beat in egg yolks, 1 Tbsp honey, and vanilla.  combine the flour, baking powder, salt, and cream of tartar; gradually add to creamed mixture and mix well.

Shape a heaping tablespoonful of dough into a 6-in. log.  In a shallow bowl, combine cinnamon and remaining sugar; roll log in cinnamon-sugar.  Loosely coil log into a spiral shape; place on a greased baking sheet.  Repeat, placing cookies 1 in. apart.  Sprinkle with remaining cinnamon-sugar.

Bake at 350 for 8-10 minutes or until set. Remove to wire racks to coll completely.  In a small bowl, melt baking chocolate with remaining honey; stir until smooth.  Drizzle over cookies.  Let stand until set.  Store in an airtight container.

My tips for this recipe:

  • Don't try to take these cookies off of your pan too quickly.  Let them sit for about 5 minutes.  Trust me...or your cookies will look like this. =(    ---->











  • For the chocolate:  Place a zip top bag in a tall tumbler. Using a rubber spatula, put the chocolate in the bag.  Zip bag then cut a hole in one of the corners to drizzle over the cookies.

Healthy-er No Bake Cookies



Yay for week 3 of the official Month of Cookies on At Home With Haley!!!  OK, so I have made no bake cookies many times.  And every time I do, I think about all of the possibilities to make my recipe healthier.  My husband and I are trying more and more to eat with less hydrogenated, high fructose-d, foods.  And I figured that it was worth a shot.  The problem is that I'm usually making them to take somewhere and am afraid to experiment.  Alright!  You've got me.  That's not why I haven't tried it.  It's because I'm afraid to experiment while doing any sort of baking.  *Hanging my head in shame*  I do really well at following a recipe, but I'm afraid to branch out.  It's funny because when I'm cooking dinner, I experiment all of the time!  For some reason I'm nervous when it comes to flour and sugar.  But today...I did it!  I put my toe to the line and tried it.  Now I realize that NO BAKE cookies isn't baking...but it's a start!  I adapted this recipe from one that my aunt gave me years ago.  I have no idea where it came from so I can't credit it anywhere.  I realized that after I finished the cookies that I forgot to put vanilla in them. (oops!) But I think they are fine without it.  If you try it with vanilla, let me know how it turns out!  The result?  A pretty tasty cookie!  It has a honey flavor, which I'm all over.  And I don't have to feel totally guilty if I eat 2...OK...4. =)  Now the downside.  I guess this is what happens when you experiment.  They are a little sticky.  I guess from the honey.  And they didn't harden like I would have liked.  Maybe done with 1/4 cup honey would have been better.  I don't know.  I'd love to hear from some of you more experienced than I in the kitchen.  So I experimented and came out with a tasty, but not perfect cookie. I'm sure even Picasso had some less than stellar projects.  =)

Healthy-er No Bake Cookies
1 cup packed brown sugar
1/2 cup honey
3 Tablespoons Cocoa (I used the dark chocolate cocoa)
1/2 cup milk
1/2 cup Natural Jif Creamy Peanut Butter
1/4 cup milled flax seed
1/4 cup wheat germ
3 cups Oatmeal (I used "Old Fashioned")
1 teaspoon vanilla (optional)

Combine sugar, honey, cocoa, and milk in a large sauce pan.  Stirring constantly, bring to a boil.  Remove from heat and stir in peanut butter.  Add flax seed, wheat germ, and oatmeal.  Stir well.  Drop tablespoon sized lumps onto cookie sheets lined with parchment paper.  Allow to cool for 1 hour before devouring.

If you'd like to try the regular version....

2 cups sugar
3 Tablespoons Cocoa
1/2 cup milk
1/2 cup peanut butter
1 teaspoon vanilla
3 cups oatmeal

Combine sugar, cocoa, and milk in a large sauce pan.  Stirring constantly, bring to a boil.  Remove from heat and stir in peanut butter.  Add oatmeal.  Stir well.  Drop tablespoon sized lumps onto cookie sheets lined with parchment paper.  Allow to cool for 1 hour before devouring.

Homemade Vanilla Wafers





Yay!  It's week #2 of the official Month of Cookies on At Home With Haley!!!  A few weeks ago I featured a recipe for homemade vanilla wafers on Recipes I Can't Wait to Try #1.  I was so anxious to try them!  We were invited to some friends house for dinner and I offered to bring a desert.  It didn't take me long to know that I wanted to take BANANA PUDDING with HOMEMADE VANILLA WAFERS! =D  Aside from chocolate, could anything be better?  I'm thinking not. So I pulled up Frugal Antics of a Harried Homemaker, went to her recipe for the cookies, and got to work.  First, I will say that this recipe was incredibly easy!  It is about as dummy proof as you can get.  It also uses ingredients that everyone keeps in their homes all the time.   No need to run to the grocery store to buy something special for one recipe.  They were delicious!  They don't taste like the cookies from the box.  They are better!  They have this great buttery flavor and a crispy texture.  I know that you must be wondering how they did in the banana pudding.  Well...I prepared the dish at 1pm and we ate the pudding around 8pm.  The cookies were still fresh and crispy!!!!!!  No soggy cookies in the entire pudding!  I was very pleased, to say in the least.  So THANK YOU Harried Homemaker!  You made my day!

Here is the recipe word for word from the Frugal Antics of a Harried Homemaker blog.

Homemade Vanilla Wafers: 

1 stick butter
1/2 cup sugar
1 egg, large
1 Tbsp vanilla
1 1/4 cup AP flour
1 tsp baking powder
Cream the butter and sugar in a mixing bowl.  Add the egg and vanilla and mix well.  Combine the flour and powder and mix in.  Using the tiniest ice cream scoop known to man (or a 1/2 tsp measuring spoon), scoop the dough onto a cookie sheet.  (I used a silpat.  If you have one, I recommend using it)  You should get about 20-24 cookies on a pan.  Bake 350 degrees for 10+ minutes.  Let their color be your guide to their doneness.  You want brown edges and tan, crispy cookies.

Chocolate Oatmeal Pecan Cookies

Yay!!!!  It's the first week of the official Month of Cookies on At Home With Haley!!!  I'm so excited!  You know the old saying, "If it ain't broke, don't fix it."?  I have that theory about some cookies.  My favorite cookie recipe in the whole wide world is one you probably already have.  That's right...the one on the back of the Nestle Tollhouse Semi-Sweet Morsels package.  *Gasp!*  Except the one I really REALLY like is the one on the back of the 24oz package.  It is Nestle's Old Fashioned Chocolate Chip Oatmeal Cookies.  I'm pretty sure my mouth is watering right now just thinking about them.  The only thing that could make them better (those of you that have been reading all of my recipes since the beginning will not be surprised that I say this) would be pecans.  OK.  I admit it.  I'm a pecan nut.  But I'm a southern girl and let's face it, in the south we like our pecans.  This time I had some extra helpers in the kitchen.  =)  I love that kids can easily help you bake cookies.  It may add a few more minutes onto the amount of time that it takes to make them, but they love it!  Not to mention memories for a lifetime!

For those of you that don't have the 24oz package, here's the recipe!

Nestle Tollhouse Old Fashioned Chocolate Chip Oatmeal Cookies
2 c. all-purpose flour
1 tsp. 
baking soda
1 tsp. salt
1 c. (2 sticks) butter or margarine, softened
1 c. granulated sugar
1 c. packed 
light brown sugar
2 tsp. vanilla extract
2 eggs
2 c. (12 oz) Nestle Toll House Semi-Sweet Chocolate Morsels
2 c. quick oats
I add 1 c. chopped pecans =)

Combine flour, 
baking soda and salt in small bowl.  Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl until creamy.  Add eggs one at a time, beating well after each addition.  Gradually beat in flour mixture.  Stir in morsels and oats.  Drop by rounded tablespoon onto ungreased baking sheets.  Bake in preheated 350 degree oven for 8 to 11 minutes or until golden brown
.  Let stand for 2 minutes; remove to wire racks to coll completely.  Makes about 5 dozen cookies.
